I tried Auxey Duresses 2021 with 2x60 secs. The wine went from slightly greener fruit and steamy to dark raspberry, from unbalanced harsh acidity to smooth and moreish. I also tried Flaccianello 2018 with 2x90 secs. The nose changed very slightly but brought out a less toasty fruit and spiced oak to a more mushroom and earth led aromas. The tannins on the palate were the real revelation and smoothened up to a chocolatey, dark cherry, leathery and soysauce like complexity which was definitely worth the wait (of 3 minutes in total!)

I tried the Kairos on three wines, a barrique-aged Alvarinho (30s), Puglian Cabernet/Primitivo blend with a touch of bottle age (90s) , and a young Crianza Rioja (60s) and all 3 showed undoubted improvement - but it was the Rioja that benefited the most, with just 60 seconds in front of this remarkable little device what started as quite muted and unbalanced became generous and opulent with aromas of black fruit and baking spice leaping from the glass, on the palate the tannins and acidity were softened and mellowed and everything just felt a little more harmonious.
